| Scrambled-Pepper-and-Curd Hero |
| 3 quarts milk |
| 2 large green peppers (sliced into 1-inch strips) |
| 4 6-inch French breads |
| 3 tablespoons olive oil |
| ¾ teaspoon salt |
| pinch of hing |
| pinch of turmeric |
| pinch of black pepper |
| From milk, make curd (see curd recipe). Do not press curd. Drain in colander for 10 minutes. In skillet heat 3 tablespoons olive oil. Add hing and pepper strips. Fry over high heat until peppers are tender and brownish (about 8 minutes). Reduce heat. Add salt, turmeric, and curd. Fry for 5 more minutes. Preheat oven to 450 degrees. Slice French breads (not all the way through). Heat in oven for 1 minute. Evenly divide pepper-and-curd mixture on breads. Serve hot. |
